Crab Apple Jelly

£4.25

The crab apple rarely gets to be the main event. It has spent centuries as a supporting cast member, the backbone of the hedgerow jelly, sharpener of the fruit blend, quiet provider of pectin to things that need help setting. Here, finally, it gets its moment.

Slow-cooked from our own farm fruit and strained until clear, it sets to a pale, glowing amber with a clean sharpness and the faintest floral edge that no cultivated apple quite manages to replicate.

Excellent alongside roast pork or lamb. Very good with strong cheese. Entirely heavenly on hot buttered toast, which is where most good things end up eventually.

Ingredients: Crab apples. Sugar. Water. Lemon juice.
