Long before anyone was making jam commercially, country kitchens were doing exactly this, gathering what the hedgerow gave up in late autumn and turning it into something that would see them through winter. Bullace is one of the oldest hedgerow fruits in Britain, a wild plum so overlooked that most people walk straight past it without knowing its name.
We don't. Ours grows tangled in with the sloes, and each year we pick both by hand and simmer them slowly with our own apple until the jelly runs dark, clear, and deeper in flavour than anything else in the range — not sharp, not sweet, something closer to what a proper autumn hedgerow actually tastes like.
It's the jelly for a serious cheese board, a plate of game, or cold cuts that deserve better than mustard from a squeezy bottle. And — no apology offered — it is exactly as good straight off a spoon, standing at the counter, as it is served properly.
